Chia chocolate pudding

per person (~125g yield)

  • 1 tbsp (heaped) chia seeds
  • 1 tbsp cacao powder (pure cacao, no sugar or other additives)
  • 1 tbsp erythritol, powdered
  • pinch salt
  • 0.09 g Stevia (varies by manufacturer, mine claims 280 times sweeter than sugar), or alternatively erythritol (1 1/2 tbsp)
  • 50 ml milk (3.5%)
  • 50 ml (1/5 US cup) cream (30%, whipping cream)
  • (optional) tiny, tiny dash of rum
  • (optional) hint chili powder
  • (optional) some vanilla flavor
  • (optional) dash of cold coffee or pinch of instant coffee

Mix dry ingredients until well mixed and there are no cacao powder lumps left. Stir in wet ingredients, keep whisking until well mixed. Let sit for 5 minutes, stir again. Cover & put in the fridge for at least 2 hours.
