Recipe

Single course meal for 2:

  • 6 eggs, beaten
  • 50g sucuk, cut into small pieces (or substitute with beef salami and "sucuk spices": ground allspice, cumin, chili, garlic)
  • 50g bacon, cut into small pieces
  • 300g canned tomatoes
  • 100g Butter
  • 100g Kaşar cheese (or Cheddar, Gouda), grated
  • Salt
  • Pepper
  • Pul biber
  • 2 green chili peppers, fresh

In a large skillet, brown bacon bits on medium heat with butter until it smells slightly nutty. Add sucuk (also sliced into small bits) and tomatoes, then simmer for 10 mins. Take off the heat and stir in the beaten eggs and half of the cheese. Add salt & pepper to taste. For this serving size you may need to keep it on a low flame while stirring to thicken it. Optional: adding some "sucuk spices" now (even when you've put in sucuk anyways) will absolutely kill it. Top it with the remaining cheese and garnish with a line of pul biber. Cover and serve when the cheese melts. Serve with bread for dipping (e.g. Pide without toppings). Variant: add more "sucuk spices". Also, removing the sucuk and bacon from the pan before simmering the tomato and adding it back in later with the eggs will give a better contrast in taste.
