Keto white chocolate nut bar

  • 65 g powdered dry milk (TODO: try it with powdered heavy cream instead)
  • 70 g cocoa butter
  • 10 ml MCT oil
  • 70 g powdered Erythritol or 10 g+Stevia
  • 40 g peanut butter
  • 160 g roughly crushed nuts (macadamias, pecans, walnuts, ...)
  • Pinch of salt

Crush nuts in mortar. Melt cocoa butter and peanut butter in micro wave. Whisk in powdered milk, sweetener, MCT, salt. Add nuts and spread on a small baking sheet lined with parchment paper. Cool and slice into bars. Alternatively, leave the warm mixture to thicken a for a few minutes, stirring ocassionally. Scoop with a tablespoon and form blobs on a baking sheet. Leave to cool to get cookie-shaped nut "bombs".
