Keto vanilla pudding
Three servings:
- 300 ml heavy cream
- 3 egg yolk, cold
- 3 g stevia powder
- 3 tsp erythritol
- 1/2 tsp salt
- 1 Vanilla pod
- 1/2 gelatin sheet (~0.8 g)
Bring cream with gelatin to a boil. Remove from heat and add stevia, erythritol and scraped seeds from vanilla pod. Leave to cool for 2 minutes. Whisk the egg yolks, then combine them with the hot cream. The remaining heat should be able to thicken it a litte within a minute, if not add back to heat for max. 1-2 minutes until it just barely seems to thicken. Add salt and whisk again, then transfer to a bowl and leave to cool.
