*1/2 tsp Xanthan gum&lt;br /&gt;
*8g vanilla sugar&lt;br /&gt;
*Zest of 1/2 lemon&lt;br /&gt;
*3 eggs (L size), beaten&lt;br /&gt;
*130ml water, warm&lt;br /&gt;
*60g butter, melted&lt;br /&gt;
*Pinch of salt&lt;br /&gt;
*(optional) Dash of rum&lt;br /&gt;
*(optional) 2 tbsp butter for chocolate glaze (thick glaze, for thin glaze use half)&lt;br /&gt;
*(optional) 100g chocolate (&amp;gt;70% cacao) for chocolate glaze (thick glaze, for thin glaze use half)&lt;br /&gt;
*(optional) 13 70mm diameter Backobladen (Lebkuchen wafers)&lt;br /&gt;

Evenly mix all dry ingredients with a whisk in a bowl. Add water and melted butter and mix quickly with a spoon until you have a consistent dough mixture.&lt;br /&gt;
Shape into 70mm diameter, 1.5 cm high round shapes (placing the dough on Backobladen makes it very easy). Place on baking sheet covered with parchment paper.&lt;br /&gt;
Bake for 16-18 min at 160°C, at most until just barely starting to brown. Should still be a bit squishy in the middle.&lt;br /&gt;
Leave to cool before doing any of the optional steps.&lt;br /&gt;
(optional) put dash of rum in a cup and brush each Lebkuchen&lt;br /&gt;
(optional) melt butter and chocolate, brush each Lebkuchen from top and sides. leave on baking sheet until the glace has hardened.&lt;br /&gt;
&lt;br /&gt;
Keto purists can replace the vanilla sugar &amp;amp; Backobladen. It nicely mask the Stevia bitterness however, and per serving I find these amounts to be neglible.&lt;br /&gt;

For 4 servings:&lt;br /&gt;
*Enameled or stainless steel oval Dutch oven or tureen (no bare cast iron, doesn&#039;t work out with wine)&lt;br /&gt;
*750 ml Riesling from Alsace&lt;br /&gt;
*1 kg medium-starch potatoes&lt;br /&gt;
*2-4 onions depending on size&lt;br /&gt;
*4 bone-on pork chops&lt;br /&gt;
*1l chicken boullion made with bouillon cubes&lt;br /&gt;
*2 tbsp butter&lt;br /&gt;
*2 garlic cloves&lt;br /&gt;
*dried marjoram&lt;br /&gt;
*black pepper&lt;br /&gt;
&lt;br /&gt;
Pre-heat oven to 240°C. Peel potatoes and onions and slice in 5 mm thick slices. In an enameled or stainless steel Dutch oven, stack potatoe and onion slices about 5 cm high. Season with salt and pepper on each layer.&lt;br /&gt;
Put in pork chops, salt+pepper and continue stacking until you run out of slices. The final layer should be only potatoe slices.&lt;br /&gt;
Pour over Riesling and fill up with bouillon, but stop 2-3 cm before reaching the top layer.&lt;br /&gt;
Cover with lid and put in oven. Lower temperature to 160°C and leave it for 2 hours. Check if the potatoes are almost done, if not leave it a little longer.&lt;br /&gt;
Once ready, slice garlic cloves in pieces or slices and put on top. Sprinkle some dried marjoram over.&lt;br /&gt;
Spread some butter flakes, this will give the top layer some nice crunch and butter taste.&lt;br /&gt;
Without the lid, leave it for another 20 minutes, until it has a nice gold-brown color.&lt;br /&gt;

For both methods, the dough should be firm enough to keep it&#039;s shape but not crumbling. Add water if it&#039;s too firm. Don&#039;t add any salt.&lt;br /&gt;
Knead for about 10 minutes until the dough is perfectly smooth. Put in refrigerator for 1 hour before making noodles.&lt;br /&gt;
